This has been a favorite of ours for years - we have made this for family gatherings and trade shows to highlight the unique, great flavors of our Peach Salsa. I used to think that cheeseballs were so boring and was never much of a fan until we made this one day before an event that we had. It was just a recipe that we thought of on the fly and it has been super popular ever since.
There are only 5 ingredients to this whole thing, so it is really quick and easy to throw together.
All you need is an 8 oz block of cream cheese at room temp, 1/2 Cup Pappy's Gourmet Peach Salsa, 1/2 Cup Shredded Cheddar Cheese, 3 Green Onions (diced) and 1 cup of chopped nuts (I used pecans for this one, but you can use macadamia nuts, walnuts, etc).
First start out by whipping your cream cheese in a stand mixer or with a hand mixer until creamy, this will take about one minute. Then add in the green onions, salsa and cheese and mix together.
Lay out a piece of plastic wrap and pour mixture onto plastic wrap. Wrap mixture with plastic wrap to form a ball.
Place the cheeseball in the refrigerator and chill for at least 1-2 hours. This will help form it into a solid "ball", instead of just looking like a dip!
Once it has been chilled, remove from the fridge, remove the plastic wrap and roll in the nuts (whichever you choose to use) until the entire ball is covered. Serve it up with crackers or chips!

Ingredients:

1/2 Cup Shredded Cheddar Cheese
3 Green Onions - chopped
1 Cup Diced Nuts (pecans, macadamia, walnuts, etc)
Directions:
Whip cream cheese in a stand mixer until creamy, approximately 1 minute. Add green onions, Peach Salsa and cheddar cheese and mix until all ingredients are blended.
Pour mixture onto a piece of plastic wrap. Wrap mixture with plastic wrap and form into ball shape. Place in refrigerator and chill for 1-2 hours until firm.
Remove from refrigerator and take out of plastic and roll in nuts, forming a ball. Serve with crackers or chips!
