White Chicken Chili

White Chicken Chili
5- Cups chicken stock
3- cans white beans, drained (if you use dried beans, soak and cook them first)
3- cups cooked chicken - Diced
1- 16 ounce jar Pappy’s Gourmet Corn Salsa
1- 8 ounce block pepper jack cheese, grated (or mozzarella for milder soup)
Salt and Pepper to taste
Sour Cream, Green Onions, Cilantro or Corn Chips to Garnish
In large stock pot, add chicken stock, beans, chicken and salsa and bring to low boil.  Add cheese, stirring until melted into soup – add salt and pepper to taste.  Garnish with sour cream, corn chips or green onions.
Makes approx. 6 Servings
