Red Pepper Tarts

½ Cup Butter - Softened
2 Cups Mild Cheddar Cheese - Shredded
1 tsp Paprika
½ tsp Salt
1 Cup Flour
1 Jar – Pappy’s Gourmet Sweet Red Pepper Jelly or Liz & Linda’s Red Hot Pepper Jelly
In stand mixer, add butter, cheese, paprika and salt.  Stir thoroughly until combined.  Stir in flour slowly and continue mixing until ingredients come together and form a “dough”.
Spray mini muffin pan with cooking spray.  Using dough, roll our 24 small ball approximately 1” in diameter.  Press balls into muffin tin to form a cup or shell.
Add 1 tsp of Pepper Jelly to each shell.
Bake at 400 degrees for 10 minutes.  Remove from oven and allow to cool for 20 minutes.  Remove from muffin tin and serve.
Make ahead of time!  Once they have cooled completely, freeze and use within 1 month.
